Campaign Pate recipe with Thermomix

The campaign pate is a typical preparation of French cuisine , which is prepared with various pork meat and chicken livers, and that we can also make at home without having to buy it in a store, since with the help of this step by step, you can make a campaign pate with Thermomix in an easy and completely homemade way.

Ingredients to make Campaign Pate with Thermomix:

• 250 grams of lean pork

• 150 grams of pork jowl

• 3 chicken livers

• 50 grams of fresh bacon

• ½ onion

• 1 clove garlic

• 1 egg

• 1 cup of Sherry Wine

• 1 tablespoon brandy

• 50 grams of liquid cream

• 50 grams of Pistachios

• 1 handful of salt

• 1 handful of pepper

• 1 handful of Herbes de Provence

• 1 tablespoon of Butter

• 1 tablespoon cornstarch

• 1 pinch of Nutmeg

How to make Campaign Pate with Thermomix:

The first thing we have to do to make this campaign pate recipe with Thermomix is to gather all the necessary ingredients.

Next, start by cleaning the chicken livers and let them macerate for an hour with the Brandy, the Sherry wine, the pepper, the walnuts and aromatic herbs. Meanwhile, blanch the fresh bacon, previously cut into small cubes, in boiling water for about 2 minutes. In this way we will obtain the flavor of this meat in the pate but in an intense way, but it will give us a subtle touch of bacon. Next, place the onion, butter, and garlic in the Thermomix glass, and blend everything at 100º C for about 3 minutes at speed 4.

Then add the eggs, the liquid cream, the pistachios and the macerated livers without the maceration liquid to the Thermomix glass and program the machine for 4 seconds at speed 4. Then finely chop all the meats, the lean pork and the jowls (except the bacon), and add them to the Thermomix glass together with the salt. Program the machine for 30 more seconds at spike speed. Next, pour all the ingredients together with the bleached bacon and the cornstarch into a bowl, cover it with aluminum foil and leave it to macerate for 24 hours, stirring everything from time to time. The next day, place the mixture in a ½ kg capacity Alba-type mould, wrap it in plastic wrap and cook it in the Varoma for half an hour at speed 1. Finally, let the pâté rest in the refrigerator for 48 hours and you can now enjoy a delicious campaign pâté with a homemade Thermomix.
