Ingredients to make Camacho Wedding Stew:
- For 8 people:
- 1 chicken or hen of 2 Kg.
- 1 onion
- 1 glass of white wine
- 1 liter of broth
- 3 croutons
- 2 boiled egg yolks
- 1 chicken liver
- 50 grams Serrano ham
- 50 grams of breadcrumbs
- 1 glass of chicken blood
- 2 eggs
- 1 clove garlic
- 12 almonds
- parsley
- Salt
How to make Camacho Wedding Stew:
- Season the chicken pieces and pass them through flour.
- Fry them in 2 glasses of very hot oil.
- In a saucepan, fry the chopped onion separately.
- Transfer the fried chicken and drained of the fat to this saucepan.
- Pour the wine, raise the heat and cover with 4 ladles of white broth.
- Fry some croutons, mash them with the 2 boiled egg yolks, transfer to the pan and cook for 15 minutes.
- Prepare the filling by crushing the liver and the ham
- Mix with the blood, the beaten eggs and the breadcrumbs
- Form some balls.
- Fry them in plenty of oil and add them to the pan.
- Continue cooking.
- Prepare a mashed with the garlic, parsley and almonds.
- Add it to the stew and cook for 3 or 4 minutes
