- To make our caissons d’Aix, we put the ground almonds, the 250 g of icing sugar and the two jams in a pot. We mix and put on the fire, mixing constantly so that the dough does not stick. We cook between 5 and 10 minutes. The mass will have to detach from the walls of the saucepan
- Let the dough cool. Then, flour a work surface with icing sugar or ground almonds, knead the dough a little and roll it out with a rolling pin, also sprinkled with a little powdered sugar. Cut the caissons with the help of a cookie cutter, knead the cuts again, stretch and make more homemade caissons. We are putting each caisson on a baking tray lined with parchment paper.
- To make the icing, we will mix the egg white together with the icing sugar.
- With a small spatula, we put a little glaze on the surface of each caisson. We let the French sweets rest for about 10 minutes while we preheat the oven to 150 ºC. When the oven is hot, turn it off and put the tray in the oven. Remove 5 minutes later, let the caisson cool for 5 minutes and transfer them to a wire rack to finish cooling. They will be ready to consume.
