Calamari Pasta Recipe with Red Pesto

I love pasta because whatever you accompany it with is always delicious. I like to bet on ingredients and sauces that complement it and that do not mask it, so this time we are learning how to prepare it with broccoli, tuna and a red tomato pesto that gives it a very mild and delicious spiciness. Pay attention to this recipe for calamari pasta with tomato pesto that is very simple to prepare.

Ingredients to make Calamari Pasta with Red Pesto:

  1. 100 grams of Calamari Pasta
  2. 500 grams of Broccoli
  3. 2 cans of tuna in oil
  4. 1 handful of grated cheese

For the tomato pesto:

  1. 100 grams of sun-dried tomatoes (preferably in olive oil)
  2. 50 grams of Parmesan cheese
  3. 50 grams of pine nuts
  4. 1 splash of extra virgin olive oil
  5. 1 pinch of salt
  6. 1 pinch of ground black pepper

How to make Calamari Pasta with Red Pesto:

  • We start by dividing the broccoli into small florets and peeling the trunk and cutting it into slices approximately half a centimeter thick. We put it in a casserole with water and put it on the fire. Cook until soft. We drain and reserve.
  • Tip: We can also steam it or even use frozen (and previously defrosted) broccoli.
  • Meanwhile, we put water in a casserole and put it to heat. When it boils, add the pasta and cook it until it is done but firm (al dente). We put in a drainer and reserve.
  • Drain the oil from the tuna, crumble it and reserve it. To prepare the red pesto, put the dried tomatoes, the Parmesan cheese, the pine nuts, a splash of oil, salt and a little pepper in the blender and beat until we obtain a smooth sauce. If necessary we can add a little more oil, the amount is not exact because it depends a lot on the dried tomatoes and whether or not they are preserved in oil.
  • Tip: If you don’t want the calamari pasta pesto to have a spicy point, don’t add pepper.
  • In a wide frying pan we put the broccoli and the tuna and lightly sauté. Add the drained pasta, mix well and add the tomato pesto. We remove, rectify salt if necessary and pour into a dish suitable for the oven.
  • Lightly sprinkle the red pesto pasta with grated cheese and place in a preheated oven at 180ºC for about 15 minutes or the time necessary for the cheese to melt.
  • Now we only have to serve this delicious calamari pasta with red pesto and enjoy a healthy and delicious dish!
