Calamaretis lyonnaise recipe

Ingredients to make Calamaretis alla lyonnaise:

  • 1 kg. of calamaretis
  • 1 large onion
  • 1 potato peeled and cut into thin slices
  • 1 bay leaf
  • Mill black pepper
  • Salt
  • 1 glass of dry white wine
  • Olive oil

How to make Calamaretti alla lyonnaise:

  1. Clean the calamaretis and remove the feather.
  2. Cut the onion into thin slices.
  3. In a pan, pour a little oil and sauté the onion with the bay leaf.
  4. When it is transparent, add the calamaretis and a minute later the potatoes.
  5. Add in white wine and cook until the potatoes are tender.
  6. Salt, pepper and serve.
