Caesar salad recipe with spinach

Ingredients to make Caesar Salad with spinach:

  • 1 large romaine lettuce washed, drained and torn
  • 4 cups spinach, washed, drained, and shredded
  • 2 cups 500(ml) of bread in small cubes
  • 1 cup olive oil
  • 250 (ml) grated fresh Parmesan cheese,
  • 4 finely ground anchovy fillets (optional).

Caesar Vinaigrette:

  • 1 egg
  • 2 garlic cloves
  • juice of one lemon
  • 1 tablespoon of tea
  • 4 (ml) Dijon mustard
  • 15 (ml) of white vinegar
  • Salt
  • Mill pepper
  • 2/3 cup 160(ml) of olive oil.

How to make Spinach Caesar Salad:

Preheat oven to 350°F 180°C). Put the pieces of lettuce and spinach in a large bowl and store. On a dripping pan, place the bread cubes and cover them with olive oil.

Cook for 10 minutes in the oven or until they are well browned and toasted. Remove from oven and store.

Add half of the cheese to the salad bowl, cover with a good amount of Cesar vinaigrette.  Well mix. Add the vinaigrette if necessary.

Add a good amount of chopped bread on top of the salad and decorate with the chopped anchovies and a little Parmesan cheese. Save the rest of the cheese for table service.

Cesar Vinaigrette: Reduce egg, garlic, Dijon mustard, white vinegar to a creamy sauce with a food processor. Add salt and pepper to your liking. Gently add the olive oil over the fillet, letting the food processor run on low speed.
