Cabrales and Apple Croquettes Recipe

Cabrales cheese is a blue cheese that comes from the council of Cabrales, in Asturias. Its maturation takes place in caves with a high level of humidity, hence the blue-green mold. This cheese offers a very characteristic smell and an intense flavor.

  • 130 grams of Cabrales cheese
  • 80 grams of flour
  • 400 milliliters of milk
  • 200 grams of Butter
  • 1 unit of golden apple
  • 1 tablespoon of sugar
  • 1 unit of Onion
  • 2 units of Egg
  • 50 grams of Walnuts
  • 1 pinch of ground black pepper
  • 200 milliliters of olive oil
  • 1 pinch of salt
  • 100 grams of breadcrumbs

How to make Cabrales and apple croquettes:

1 To make these Cabrales and apple croquettes we have to gather all the ingredients.

2 Melt 40 grams of butter in a pan and add the apple cut into pieces and the sugar.

3 Add the spring onion, sauté for 5 minutes, add the chopped walnuts and set aside.

4 Heat the rest of the butter in a saucepan and add the flour. We should cook it for about 3 minutes.

5 When the flour and butter have been well mixed, add the milk little by little and season with salt and pepper. Without stopping moving, we cook the dough until it detaches from the walls of the pot. More flour can be added if the dough requires it.
