Butter Pea Soup Recipe

Ingredients to make Butter Pea Soup:

  • 1 tablespoon unsalted butter
  • 1 teaspoon freshly squeezed lemon juice
  • 1 medium leek, stemmed, halved lengthwise, and thinly sliced
  • 2 1/2 cups vegetable broth or chicken broth
  • 1 teaspoon freshly ground black pepper
  • 3 cups fresh peas (can use thawed canned or bagged)
  • 1/4 cup fresh mint leaves
  • 2 teaspoons of coarse salt

How to make Butter Pea Soup:

1.Melt the butter in a medium saucepan over medium heat until foamy.

2.Add the leek, 1/2 teaspoon salt and a pinch of pepper and cook, stirring occasionally, until soft, about 3 minutes.

3.Add broth, add 1 1/2 teaspoons salt and pepper, bring to a boil. Add the peas and bring to a boil again.

4.Reduce heat to medium-low and simmer until peas are tender, about 5 minutes.

5.Remove the pot from the heat, add the mint leaves and using a food processor or blender, whip the soup to make a cream. Let rest.

6.Transfer the soup to a clean saucepan or heatproof container and add the lemon juice.

7.Taste and season with more salt, pepper and lemon juice as needed. It can be served hot or cold and accompanied by bread croutons.
