Buffalo Stew Recipe

Ingredients to make Buffalo Stew:

  • for 4 people
  • 1 kg of buffalo zancarron
  • 6 asparagus
  • 4 artichokes
  • 2 potatoes
  • 1 onion
  • 1 leek
  • 3 garlic cloves
  • 1/4 liter of water
  • 1/2 liter of red wine
  • Salt
  • olive oil
  • chopped parsley

How to make Buffalo Stew:

  1. Chop the onion, garlic and leek. Poach them in a pan with oil. Chop the meat, pass it through flour and fry it in a pan. When you turn the pieces over, sprinkle them with salt.
  2. Add the meat (without oil) to the vegetables that we have in the pan. Add the wine and water, mix and cook over low heat for an hour. Peel, chop and fry the potatoes. Add them to the pan along with the cooked artichokes and the canned asparagus. Heat everything for a few minutes. Sprinkle with chopped parsley and serve.
