Brown rice with vegetables recipe

Hello friends, now I bring you a recipe that is very special to me since it is one of my mother’s favorites, and we love to make it at home since it is rice with vegetables that you can use both to eat and main dish or to accompany some protein.

This brown rice with vegetables is very healthy and you can vary the ingredients if you wish, in my case I sometimes add mushrooms, corn, lentils, even beans and I assure you that it will be just as delicious or even better. Enjoy it!!

Ingredients to make Brown Rice with Vegetables:

  • 2 cups of boiled water
  • 2 tablespoons of olive oil
  • 3 small chives finely chopped
  • 1 teaspoon of sea salt
  • ½ cup of brown rice (100 grams)
  • ½ purple onion
  • ½ orange and green bell pepper
  • ¼ cup broccoli
  • ¼ cup Green Beans
  • ¼ cup carrots
  • ¼ cup of beets
  • 1 pinch of Coriander
  • 1 pinch of oregano
  • 1 pinch of Paprika
  • 1 pinch of Pepper

How to make Brown Rice with Vegetables:

  1. First you have to preheat the pot that you will use to cook, add the olive oil and let it heat for a moment.
  2. Now add the chives, the pepper, the coriander, the oregano, the paprika and the salt, mix very well and start to make a sauce.
  3. The spices used in this recipe are to taste, you can also add some chili powder if you wish.
  4. Then add the brown rice and mix everything very well.
  5. Sauté it for 1 or 2 minutes.
  6. It is time to add the boiling water and mix very well.
  7.  Cover the pot not completely and raise the heat to high, when it starts to boil, lower the heat and let it cook for 30 minutes.
  8. When you see that the rice is dry, check if it is dry in the background, if so, turn off the heat and leave it covered.
  9. Now we prepare the vegetables. To do this, preheat a saucepan, add 1 tablespoon of oil and let it heat up.
  10. Then add the onion to cook for 1 minute, then add the chills and continue cooking for 1 more minute.
  11. The onion must be cut into feathers and the chills into cubes, as seen in the photo.
  12. It is time to add the rest of the vegetables, the carrot, the broccoli and the green beans. Mix them very well with the other ingredients and cook them for 2 minutes.
  13. Keep in mind that the broccoli must be previously cut into small pieces and boiled for 1 minute in salted water.
  14.  The green beans cut in Vichy and boiled for 3 minutes in salted water (in this case the time may vary, I advise you to try them before removing them from the water and check if they are cooked) and the carrots cut into cubes.
  15. Now add the rice and mix everything very well.
  16. To finish, add the beetroot, previously cut into cubes and boiled for 1 minute in salted water, and stir with the rest of the ingredients to finish preparing our brown rice with vegetables.
  17. To serve the brown rice with vegetables in a beautiful way, add enough rice to a deep plate, when you have already filled it, put a flat plate on top of the deep plate and turn it over.
  18. Let it rest for 1 minute and remove the deep plate and you will see that you will have the shape of the plate you chose.
