Ingredients to make Brown Rice Salad with Avocado:

  • 200 grams of brown rice (1 cup)
  • 100 grams of Smoked Tofu
  • 100 grams of Pickled Carrot
  • 100 grams of Pickled Beetroot
  • spinach washed
  • 1 avocado
  • Olive oil
  • 1 handful of raw sunflower seeds
  • 1 handful of garlic sprouts
  • Salt

How to make Avocado Brown Rice Salad:

The first step to make this rich light brown rice salad is to boil water to cook the rice. Once the water is boiling, add the brown rice and let it cook for at least 20 minutes, since this type of rice takes a little longer to cook than normal white rice.

Meanwhile, we dice the tofu and fry them briefly in a little oil in a non-stick pan with a little soy sauce to give the vegan avocado rice salad a little more flavor.

Once the brown rice is cooked, we drain it well, we pass it water and with a little oil we fry it for about 5 minutes in the same pan as the tofu so that it takes on its flavor. Then we peel and cut the avocado into wedges and reserve it for later.

Now all we have to do is assemble the light brown rice salad: to do this, we place a base of washed spinach leaves in a deep plate, one of those that come in a bag. Then a good portion of rice and fried tofu. Then a little carrot and pickled beet on top, and to finish we place the avocado wedges and decorate with the garlic sprouts.
