Brown Rice and Cheese Croquettes Recipe

  • 1 cup of brown rice (200 grams)
  • 2 units of Eggs
  • 20 grams of fresh parsley
  • 100 grams of mozzarella cheese
  • 1 pinch of garlic paste
  • 1 jet of oil for frying
  • 1 pinch of salt
  • 1 pinch of pepper

How to make Brown Rice and Cheese Croquettes:

1 To start making the recipe for vegetarian croquettes, in the first step you must prepare all the ingredients. With the above amounts you can prepare between 12 and 15 rice croquettes.

2 Take a pot over medium heat, add a teaspoon of oil, add the brown rice and fry it for a couple of minutes. Let’s remember that brown rice is rice that has not been processed and still contains the pistil, which makes it cook a little slower than normal rice.

3 Brown rice is cooked differently, so for one cup of brown rice we add three cups of water. Being a harder rice, it requires more liquid than normal rice. When you see that the water dries up, you should lower the heat and cover the rice pot, keep it at this temperature for approximately 20 minutes so that the rice finishes cooking.

4 When the brown rice is cooked, drain it and put it in a bowl. Then, add the fresh parsley and mix well to continue preparing the croquettes.

5 Add to the bowl the eggs, the cheese in pieces and garlic paste to taste. It does not matter if the cheese is not grated, because we are going to process the ingredients with the help of a mixer or blender until the ingredients are integrated and the dough is well mixed.

7 Take a pan with oil to fry over medium heat, once you notice that the oil is hot, with the help of a spoon add a little of the dough to be able to fry the rice croquettes. When you see that they are golden on one side, carefully turn them over so that they brown on the other side. Approximately, you should fry the croquettes for 3-4 minutes on each side, or until you see that they take the golden color you want.

8 Remove the brown rice and cheese croquettes to a plate with absorbent paper so that it removes the excess fat that the preparation contains.
