Ingredients to make Broken Calzones with yeast:
- 3 cups of flour
- 1/2 cup powdered sugar
- 1 pinch of salt
- lemon zest to taste
- 1 tablespoon of rum or pisco (optional)
- 60 grams of softened butter
- 3 teaspoons of baking powder
- 1 glass of water
- 1/2 liter of oil to fry
- 1 egg
- 2 yolks
How to make Broken Calzones with yeast:
- In a bowl, sift the flour, powdered sugar and baking powder and stir.
- If you prefer, you can make the icing sugar recipe yourself at home.
- Add the rest of the ingredients at once except the water that is added little by little until it forms firm dough.
- Stretch the dough of the broken underpants with a rolling pin until it is thin (between 5 and 6 mm).
- Once stretched, cut into rhombuses or rectangles and make a cut in the middle of each one and then pass one side of the dough through it and make the particular shape of the Chilean broken calzones.
- Heat the oil and fry until golden. Turn them from time to time (2 to 4 min.) and when taking out sprinkle powdered sugar.
- Serve the calzones roots with yeast freshly made and well drained. You will see how crunchy they are!
