Broccoli with mayonnaise recipe

Ingredients to make Broccoli with mayonnaise:

  • 1 piece of fresh whole broccoli (or frozen)
  • 1 pinch of salt
  • Water
  • For the mayonnaise:
  • 1 egg
  • 100 milliliters of sunflower oil
  • 1 pinch of salt

How to make Broccoli with mayonnaise:

Wash the broccoli well and cut it into florets.

Place a pot with plenty of water and a little salt and bring it to a boil. When it boils, cook the broccoli until it is soft (approximately 10 minutes), then drain well and reserve.

Tip: The salt will help set the green color of broccoli cooked with mayonnaise.

Meanwhile, prepare the mayonnaise sauce: to do this, place the cracked egg in the blender or electric mixer along with the oil and a pinch of salt. Put the arm of the blender touching the bottom of the glass and without lifting it at all, start to mix at medium speed. When you see that the sauce begins to thicken, then you can gradually make vertical circular movements so that it emulsifies completely. Adjust the salt and add more oil if you want more, but always adding it very little by little at the same time that you beat the homemade mayonnaise.

I prefer to use a mild vegetable oil such as sunflower oil so as not to give the sauce a very intense flavor, but you can use olive or sesame oil, for example.

Tip: If you want to save even more time, buy the mayonnaise already made, but obviously, the homemade one is much better.
