  • 1 unit of Broccoli
  • 200 grams of Quinoa
  • 8 units of cherry tomato
  • 1 pinch of salt
  • For the dressing
  • 1 unit of lime
  • 3 tablespoons of olive oil
  • 1 pinch of salt
  • 1 pinch of white sugar
  • 1 handful of fresh Cilantro

How to make Broccoli Salad with Quinoa and Lime:

  1. We gathered all the ingredients to prepare the broccoli salad with quinoa and lime.
  2. First of all, we prepare the dressing by mixing 2 teaspoons of lime juice with 2 tablespoons of olive oil, a pinch of salt, a pinch of soft sugar and a tablespoon of chopped fresh coriander.
  3. Wash the cherry tomatoes and let them marinate in the dressing that we have previously prepared, either whole or cut in half.
  4. Cook the broccoli in abundant boiling water with a little salt for approximately 12 minutes. We drain and reserve.
  5. On the other hand, we cook the quinoa in water with a little salt, following the manufacturer’s instructions. Drain and reserve until it cools down a bit.
  6. Mix the quinoa with the broccoli, add a pinch of salt if necessary and add the cherry tomatoes with the dressing.
  7. Mix well so that all the ingredients are integrated.
  8. This broccoli salad with quinoa and lime, in addition to being very healthy, is a refreshing dish for the warmer months.
