Broccoli is increasingly present in our kitchens and it is not surprising, since this vegetable, family of cabbage, cauliflower, bimi and Brussels sprouts, is a great source of vitamins. Specifically, this vegetable is a great source of vitamin C and E. Although we normally eat broccoli cooked, steamed or sautéed, the truth is that it can be eaten raw and benefit from all its nutritional value, so it is advised not to cook it in excess, because all its vitamins would go to the cooking broth.

Ingredients to make Broccoli Cupcakes:

  • 600 grams of broccoli
  • 1 small onion
  • 1 clove garlic
  • 50 grams of breadcrumbs
  • 125 grams of flour
  • 4 eggs M
  • 1 pinch of salt
  • 500 milliliters of olive oil for frying

How to make Broccoli Cupcakes:

Wash the broccoli, remove the flowers and cut them if they are very large. Don’t throw away the trunk of the broccoli, peel it, keep its most tender inner part and chop it too. Put both the flowers and the chopped trunk in a pot with salted water and boil for about 10 minutes.

Drain the broccoli when cooked and let it cool down. Peel the onion (it has to be small or use only half if it is large) and chop it finely. Also peel the garlic and fillet it finely. Also chop the broccoli once you can handle it.

In a large bowl, put the broccoli, garlic and chopped onion. Add the flour and the bread and mix well to obtain the dough with which you will make the broccoli cakes.

Beat the eggs with a little salt and add them to the mixture of broccoli, flour and bread. Stir, mixing the ingredients well.

Now you have two options: make the broccoli cupcakes baked or fried. If you choose to bake them, preheat the oven to 180ºC. Put the dough in individual greased molds, cupcake or flan type. Compact the dough well and give it a few taps so that it settles and does not bubble. You can use a silicone mold, as it will help you in unmolding. Bake the cupcakes at 180ºC with top and bottom heat for 12 minutes. Prick the center of a cake with a toothpick to check that the dough is curdled and does not stick to the toothpick.

To make the fried broccoli patties, heat the olive oil. With the help of two teaspoons, form some ribbed balls and fry them for 10 minutes on both sides.
