• 1 grated raw carrot

• 3 tablespoons oat flakes or oatmeal powder

• 3 sprigs of broccoli (just the florets, without the stem)

• 2 tablespoons of parsley

• 5 tablespoons gluten-free cornmeal

• Water (enough quantity)

For the filling:

• 1 tomato

• Onion

• Chives

• 1 pinch of salt and pepper

• 1 squeeze of lemon

How to make Broccoli Arepas:

In a bowl, grate the carrot, chop the parsley and broccoli into florets. To make broccoli arepas with more vegetables, simply add your favorite vegetables and finely chop or grate them. For example, you can add zucchini.

In another bowl, add water, cornmeal and a pinch of salt. The amount of water to make the broccoli arepas without wheat flour should be enough to obtain a consistent dough. Thus, it is better to start little by little and add as needed. Mix the vegetables with the flour and oatmeal and knead until you create a homogeneous paste.

In a skillet over medium heat, add a splash of sunflower or olive oil and let it heat up.
