Brioche French toast recipe

Ingredients to make Brioche Torrijas:

  • 1 brioche bread roll (250 g)
  • 1 cinnamon stick
  • 1 lemon (skin)
  • 500 milliliters of liquid cream, heavy cream or milk
  • 2 eggs
  • 2 tablespoons of white sugar
  • 1 pinch of brown sugar
  • sunflower oil for frying

How to make Brioche Torrijas:

  • To start with the caramelized brioche toast recipe, first place the liquid cream or milk in a saucepan together with the cinnamon stick, white sugar and lemon peel, bring them to a boil. When the mixture begins to boil, remove it from the heat and let it infuse covered until it is warm.
  • Preheat the oven to 180 ºC and cut the crust of the brioche bread for French toast. Then, cut it into 8 pieces about 4 cm wide approximately. Place them on a tray lined with parchment/parchment paper.
  • Put the Torrijas with brioche bread in the oven with heat up and down in the central part for 1-2 minutes so that they harden a bit and thus better absorb the liquid.
  • Tip: if you have time you can leave the brioche French toast soaked in the fridge for a day and cook them the next day instead of putting them in the oven.
  • In a bowl, place the baked pieces of brioche bread and pour over the strained infused mixture. Leave them for about 2 minutes and turn them over so that they are well soaked on both sides.
  • Heat a pan with plenty of sunflower oil until it is very hot. At the same time, beat the eggs and coat the Frenchtoast with brioche bread, well drained.
  • Tip: you will notice that they have increased a little in size due to the liquid they have absorbed.
  • Fry the homemade French toast until golden brown on both sides. Then reserve them on a plate with absorbent paper to remove excess oil.
  • To get the caramelized Torrijas, just made place them on another plate without the paper, sprinkle a little brown sugar on top and the edges and with a kitchen torch or burner, burn the sugar until it turns a nice golden brown color.
  • Tip: you can caramelize the French toast without a blowtorch by putting them in the oven with the grill at 220ºC on the upper rack for a few minutes once you have sprinkled the sugar on top and a few drops of water
  • Place the caramelized brioche French toast on the plate where you are going to serve them and accompany them with vanilla ice cream, for example, an exquisite combination.
  • Try to do this last step and serve the caramelized brioche French toast at the moment so that they are better, otherwise the sugar will soften and they will not be the same as freshly made.
