Breaded Sardines with Tomato Sauce Recipe

Ingredients to make Breaded Sardines with Tomato Sauce:

  • 12 large sardines.
  • 1 fresh spring onion.
  • 1 dl of olive oil 0´4º.
  • A pinch of paprika.
  • 1 cup of flour.
  • 2 eggs.
  • 1 cup of grated bread.
  • 2 tablespoons of chopped parsley.
  • 200 grams of pear type tomato.
  • 1 tablespoon of thyme.
  • 2 cloves of garlic.
  • salt and black pepper

How to make Breaded Sardines with Tomato Sauce:

  1. We clean the sardines and remove the head, guts and spine. We beat the eggs with parsley, salt and pepper.
  2. Dip the sardines first in the flour, then in the beaten eggs and finally in the breadcrumbs (it must be pressed well so that the bread sticks).
  3. Heat the oil in a frying pan (reserving a tablespoon) and fry the sardines until the breadcrumbs turn golden.
  4. Crush the tomatoes, place them in a saucepan and cook together with a tablespoon of oil, the chopped fresh chives and garlic, paprika, thyme, salt and pepper.
  5. We serve the sardines in sauce with tomato sauce.
