Ingredients to make Boricua rice with onion and bacon:
- 3½ cups of Water (840 milliliters)
- 2 cubes of beef broth
- ½ stick of Butter
- 2 teaspoons of olive oil
- 1 clove garlic
- 1 unit of onion
- 2 tablespoons of white flour
- 1 pinch of Paprika
- 1 pinch of salt
- 1 pinch of Pepper
- 1 package of chopped bacon
- 3 cups of rice
How to make Boricua rice with onion and bacon:
- In a saucepan, pour 3 1/2 cups of water with two meat bouillon cubes and bring to a boil.
- Meanwhile, in another saucepan, add half a stick of butter, two teaspoons of olive oil, a clove of garlic and a small onion (your choice) until golden brown.
- After browning the onion, add two teaspoons of white flour, paprika, salt and pepper to taste.
- Once mixed, you pour the previously boiled meat broth and keep it over low heat.
- In a cauldron you put your pieces of chopped bacon (to taste) and toast them, when they are ready you remove them from the cauldron without removing the oil they produced.
- In the oil, add a tablespoon of sauté and one of olive oil, once mixed, pour the onion soup that you created previously.
- When it is boiling add 3 cups of medium grain rice and put over medium heat until dry.
- When the rice is dry, move it and place it over low heat until the grain is not hard but not completely open either.
- Once the rice is ready, add the bacon and that’s it.
