Ingredients to make burgundy mushrooms:
- 1 kilo of mushrooms
- 3 shallots
- 2 tablespoons of crushed parsley
- 2 cups of olive oil
- Salt
- Pepper
How to make burgundy mushrooms:
In a frying pan, put the heads in the oil, stirring well for 10 minutes. Put these mushrooms in another pan with the oil, without covering. Cook for 45 minutes over low heat. Peel and clean the tails, mash them with the peeled shallots. 10 minutes before the end of the cooking of the heads, put the rest of the oil in a small frying pan, heat it and quickly sauté the mixture of the shallots and the tails. Season with salt and pepper. Serve the mixture very hot on the heads and garnish with parsley.
