Bonito Almodóvar recipe

Ingredients to make Bonito Almodóvar:

  • 1 slices of tuna of 750 gr.
  • 75 gr. of butter
  • The juice of two lemons
  • 1 tablespoon of flour
  • 1/4 liter of milk
  • 200 gr. of tetilla cheese
  • 1/2 kg of Brussels sprouts
  • A small jar of asparagus tips
  • salted
  • Pepper

How to make Bonito Almodóvar:

  1. Cook the Brussels sprouts with water and salt. Drain and reserve. Salt the tuna and place it in a deep dish.
  2. Sprinkle it with half the lemon juice and leave it to macerate for 15 minutes. Melt 1/3 of the butter in a pan, add the tuna and cook over low heat for 3 minutes.
  3. Remove it and put half of the remaining butter in the pan and cook it on the other side, sprinkling it with lemon juice.
  4. In a saucepan, melt the rest of the butter, add the flour and mix it with a wooden spoon until it starts to turn cultured.
  5. Add cold milk and diced cheese. Add salt and pepper and continue mixing until it starts to boil. Serve the bonito with this sauce and with the Brussels sprouts as a garnish.
