Ingredients to make Bonito Almodóvar:
- 1 slices of tuna of 750 gr.
- 75 gr. of butter
- The juice of two lemons
- 1 tablespoon of flour
- 1/4 liter of milk
- 200 gr. of tetilla cheese
- 1/2 kg of Brussels sprouts
- A small jar of asparagus tips
- salted
- Pepper
How to make Bonito Almodóvar:
- Cook the Brussels sprouts with water and salt. Drain and reserve. Salt the tuna and place it in a deep dish.
- Sprinkle it with half the lemon juice and leave it to macerate for 15 minutes. Melt 1/3 of the butter in a pan, add the tuna and cook over low heat for 3 minutes.
- Remove it and put half of the remaining butter in the pan and cook it on the other side, sprinkling it with lemon juice.
- In a saucepan, melt the rest of the butter, add the flour and mix it with a wooden spoon until it starts to turn cultured.
- Add cold milk and diced cheese. Add salt and pepper and continue mixing until it starts to boil. Serve the bonito with this sauce and with the Brussels sprouts as a garnish.
