Ingredients to make Bombay Rice:
- 1/4 cup sunflower oil
- 2 cups chicken meat, minced
- 1 cup sliced mushrooms
- 1 chopped green sweet pepper
- 1 small onion chopped
- 2 cups of peas
- 4 cups long grain rice, cooked
- 1 teaspoon curry powder
- 1/4 teaspoon salt
How to make Bombay Rice:
- In a wok or large skillet, heat half the oil.
- Fry the chicken, mushrooms, peppers, onions and peas.
- Remove and keep warm.
- Heat the rest of the oil.
- Add rice and seasonings, fry for 3 minutes.
- Put in a serving dish. Put the chicken and vegetables on the rice.
- Serve.
- For 4 servings.
