Ingredients to make boletus croquettes:
• 200 grams of boletus
• 1 small or medium onion
• 30 grams of cured ham (optional)
• 50 grams of butter
• 50 grams of flour
• 500 milliliters of milk
• 1 splash of olive oil
• 2 eggs
• 200 grams of breadcrumbs
• 1 glass of olive oil
• 1 pinch of salt
How to make boletus croquettes:
Chop the onion very small. Separately, put a frying pan on the heat with the 50 grams of butter and a splash of olive oil and fry the onion until it turns color. Chop the boletus into small pieces. You can choose the boletus that you like the most to make these croquettes.
When the onion is poached, add the chopped boletus. Put the fire a little strong so that the boletus brown and do not release too much water. Otherwise, the croquettes would be very runny.
Tip: At this point, you can add chopped cured ham to prepare delicious boletus and ham croquettes.
Once the onion and boletus are golden, add the 50 grams of flour. Stir all the ingredients and let the filling cook for a couple of minutes. Heat the milk in a saucepan or in the microwave, whichever is most comfortable for you. Likewise, you can use whole, skimmed or vegetable milk to make the boletus croquettes lighter.
Add the milk little by little and mix so that it forms a dough that detaches from the pan. You may need more or less milk, depending on what the dough calls for. Place the boletus croquette dough in a bowl, let it cool down and put it in the fridge for at least a couple of hours.
After the resting time, place the beaten eggs in a bowl and the breadcrumbs in another. Take the dough out of the fridge, take a portion, form the croquette, pass it through the egg and then through the breadcrumbs. Repeat this operation until you finish all the dough. Put a pan with plenty of oil over medium heat and, when hot, fry the homemade boletus croquettes until golden brown.Remove them from the pan and place them on a plate lined with kitchen paper to remove excess oil. You can also cook the boletus croquettes in the oven by placing them on a tray and baking them for 15-20 minutes at 180ºC, turning them halfway through cooking.
