Ingredients to make blue cheese and cottage cheese pate with Thermo mix:

• 150 grams of blue cheese

• 125 grams of Gouda cheese

• 125 grams of Gruyere cheese

• 150 grams of cottage cheese

• ½ cup of cream

• ½ cup of milk

• 50 grams of butter

• 50 grams of Walnuts (optional)

• 1 pinch of salt

• 1 pinch of pepper

How to make blue cheese and cottage cheese pate with Thermo mix:

To start making this pâté, first we have to pour the cream, milk and butter into the Thermo mix glass and program 3 minutes, at a temperature of 70ºC and speed 5. Add the remaining ingredients except the walnuts and blend for 15 seconds at speed 8.

We put the Thermo mix at a temperature of 70ºC and speed 8 for 3 more minutes. It has to be a homogeneous pâté, so if you see that it is not like that, you just have to add a little more milk or cream and beat again. If we are going to use walnuts, now is the time to add them chopped, incorporating them with the spatula? A good accompaniment for this blue cheese and cottage cheese pate would be a cherry tomato jam, as a savory option, or a light strawberry jam as a sweet and light option.
