Black risotto recipe

Ingredients to make BLACK RISOTTO:

  •  50g butter
  •  1 chopped onion
  •  400 g arborio rice
  •  130 ml quality red wine
  •  2 tablespoons dried tomato
  •  30 g squid ink
  •  1 l fish broth approximately
  •  50 g grated Parmesan, salt

How to make BLACK RISOTTO:

  1. In a saucepan, fry the onion in butter until transparent.
  2. Add the rice and stir. Add the wine and tomato and reduce a little over medium heat.
  3. Mix or dissolve the ink in a little hot broth and add it to the rice. Remove.
  4. Pour in the rest of the broth, while constantly stirring the rice.
  5. Let cook for 12 minutes without stopping stirring.
  6. After this time, remove from the heat, add the cheese and cover the pot.
  7. Leave a few more minutes and serve hot
