Black rice with squid ink recipe

Ingredients to make black rice with squid ink:

  • 400 grams of Rice
  • 3 units of squid
  • 1 unit of onion
  • ½ unit of green pepper
  • 1 unit of Carrot
  • 12 units of Clams
  • 2 units of Squid ink bag
  • 1 jet of Oil
  • 1 tablespoon butter
  • 4 cups of Water (960 milliliters)
  • 1 pinch of salt

How to make Black Rice with Squid Ink:

  1. The first step is to list the ingredients. Finely chop the onion, carrot and pepper. Also, clean and cut the squid, reserving the inks and do the same with the clams.
  2. Next, heat oil and butter in a pan and sauté all the vegetables. Season well and let it cook for a few minutes.
  3. When the vegetables are well poached, add the squid and stir everything together. When they start to brown, add the rice and cook it well.
  4. Add the inks and add the water. At this point you should check the seasoning and correct with more salt if necessary. Leave on the fire between 15-18 minutes or until the liquid is consumed.
  5. Meanwhile, sauté the clams in a pan with oil until they open. When the rice is about to finish, add the clams with the juice they have released. Turn off the flame and let the black rice rest for a few minutes.
