Ingredients to make black rice with prawns and aioli:

  • Oil
  • 25 onion
  • 1 clove garlic
  • 2 ripe tomatoes
  • 1 tablespoon of Vera paprika
  • 250 g rice prawn
  • 200 g of squid rings
  • 1 sachet of squid ink
  • 200g of rice
  • Salt
  • To make the stock:
  • monkfish head
  • carrots
  • 1 onion
  • 1 leek
  • To make the aioli:
  • Garlic
  • 1 egg
  • 1 pinch of salt
  • 1 splash of sunflower oil
  • lemon drops

How to make black rice with prawns and aioli:

  1. First of all take a saucepan and put water, a little oil and salt and put the monkfish heads, carrots, etc., and then add the heads and shells of the prawns and make the homemade black rice fumet for 25 minutes.

  8. And finally, once the black rice with peeled prawns is finished, let it rest for 5 minutes off the heat and eat!
