Black rice recipe with squid and prawns

Ingredients to make black rice with squid and shrimp:

  • 180 g of bomba rice
  • 2 cloves of garlic
  • 1 liter of fish stock
  • 1 sprig of parsley
  • 4 g cuttlefish or squid ink
  • Prawns peeled to taste or king prawns
  • Squid cut into rings to taste
  • Salt
  • Olive oil

How to make black rice with squid and shrimp:

  1. We prepare the minced rice with squid ink and prawns, which consists of peeling the garlic and putting it in a blender glass with the parsley, a little salt and a splash of olive oil, and blending.
  2. We put the paella on the fire and cook the squid and prawns with the minced meat.
  3.  If it sticks a lot, pour a little of the fish broth or fumet.
  4. Let cook for about 5 minutes, add the rice and fry another 5 minutes. After this time we add the cuttlefish or squid ink.
  5. We put the broth and bring to a boil, and when it starts to boil we calculate 10 minutes for the black rice with squid to cook in its ink.
  6. When the rice begins to dry and forms a layer on top (collagen from the fish) we place some good prawns or prawns on top to give color.
  7. After 10 minutes, lower the heat and cook the black rice with prawns and squid for at least 5 more minutes.
