Black Rice Croquettes Recipe

We teach you how to prepare some black rice croquettes, a different snack with a lot of flavor, ideal for an appetizer to surprise everyone. As for the preparation of these croquettes, we will need black rice, in addition, this ingredient can be used if you have leftover rice from another dish. You can also add pieces of cuttlefish or squid to this preparation, accompanied by an aioli or mayonnaise.

Ingredients to make black rice croquettes:

• 350 grams of rice or paella leftovers

• 1 bag of squid ink

• For the croquettes

• 300 milliliters of milk (1¼ cups)

• 2 tablespoons of flour

• 40 grams of butter

• 2 units of eggs

• 100 grams of flour

• 200 grams of breadcrumbs

• 1 glass of oil

How to make black rice croquettes:

To start with this recipe for black rice croquettes, first start by making rice as usual. We point out that when you put the water or fish broth for the paella, you must add the black ink and mix well. And, if in this case you have leftover rice, you should add a saucepan with the remaining rice, dissolve the squid ink in water, add the rice and put it on the fire. Next, stir until the rice is completely black.

When the rice is done, transfer it to a bowl and let it cool. And, if you have decided to include cuttlefish, shrimp or squid, cut it into small pieces and mix it with the rice. Add a casserole with butter to the fire, and, once it is discarded, add 2 tablespoons of flour. Mix and cook the flour for a couple of minutes.

Add the rice to the pan and mix well with the flour. Next, heat the milk for 1 minute in the microwave and add the milk little by little in the pan, stir until a dough remains to make the black rice croquettes. We emphasize that there should not be a very hard or very soft dough, but it must be a dough that detaches from the pan.

Tip: the amount of milk can vary.

Once you have the dough made, transfer it to a bowl, and, when it is cold, reserve it in the fridge for 3-4 hours, or overnight. Prepare the beaten eggs on a plate, in another add the flour and, finally, pour the breadcrumbs. Next, take pieces of dough and form the croquettes. Next, pass them through flour, then through the egg and, finally, through the breadcrumbs.

Add a frying pan to the fire with abundant oil, and, when it is hot, fry the croquettes. When they are golden, remove them and place them on a plate with kitchen paper to release the excess oil. Add them to a bowl and serve the rice croquettes with squid.
