Black in shirt

Ingredients to make Black in Shirt:

• 225 gr. dark chocolate
• 1/2 teaspoon instant coffee
• 2 tablespoons Grand Marnier or Cointreau
• 6 large eggs
• 175 gr. of sugar
• 175 gr. of butter
• Salt
• 300 ml. liquid cream
• 2 tablespoons of sherry.

How to do Black on Shirt:

1. Chop the chocolate and put it in a bowl.
2. Dissolve the instant coffee in three tablespoons of hot water and add it to the chocolate along with the Grand Marnier
3. Melt in a bain-marie and remove from heat.
4. Separately, separate the yolks from the egg whites and beat the first with the sugar and butter.
5. Add this mixture to the melted chocolate.
6. Beat the egg whites until stiff with the salt and carefully incorporate into the chocolate
7. Grease a tall mold, pour the preparation into it and press with a spoon in the center to form a hollow.
8. Cover with aluminum foil and cook in the oven, in a bain-marie (with water up to half the pan) for 1 hour and 1/2.
9. Once cold, unmold in a fountain.
10. Whip half the cream without whipping it and add the sherry.
11. Bathe the soufflé with this sauce and serve accompanied by the rest of the cream in a jug.
