Black honey cake recipe (cane honey or anchovy cake) from Paraguay

Ingredients to make black honey cake (cane honey or anchovy cake) from Paraguay:

  • 3 cups of wheat flour 000
  • 90 grams of lard or butter
  • 2 cups of black honey (cane honey)
  • 1 tablespoon orange zest
  • 2 teaspoons of baking soda
  • 2 cups of cold milk
  • ½ cup of white sugar

How to make Black honey cake (miel de cane or torta anchovy) from Paraguay:

  1. Beat the lard or butter with the sugar until creamy.
  2. Next, mix the baking soda, the orange zest with the sifted flour, and add everything together with the previously beaten butter and sugar.
  3. Little by little add the milk andcane syrup. When all the ingredients of the cane honey cake are well mixed, beat for about 5 minutes.
  4. Then flour a mold and pour the Paraguayan cake dough. Take the honey cake to a moderate oven (150-180 ºC) for approximately 20 minutes, or until you see that it is well cooked.
  5. Tip: The cooking time will depend on your oven.
  6. Once baked, take the Paraguayan anchovy torta out of the oven and let it cool on a wire rack if possible.
