Biryani rice recipe with vegetables

Biryani is a typical dish of Indian cuisine that consists of a plate of fried rice with different additional ingredients, in this case with vegetables. Biryani rice traditionally has a mixture of spices that give it all the flavor and aroma, and yogurt that provides a bit of creaminess. It can be served as a main course or as a side dish to a curry dish or lentil dal.

Ingredients to make Biryani Rice with Vegetables:

  • 260 grams of biryani or basmati rice
  • 1 small cauliflower
  • 1 carrot
  • 1 handful of green beans
  • 1 onion
  • 1 tomato
  • 2 cloves of garlic
  • ½ teaspoon grated fresh ginger
  • 1 teaspoon of saffron
  • 1 teaspoon salt
  • ½ cup plain soy yogurt
  • 2 tablespoons of oil
  • ½ lemon (juice)
  • ½ teaspoon cumin
  • 4 nails
  • ½ teaspoon cardamom
  • 2¼ cups water or vegetable broth

How to make Biryani Rice with Vegetables:

  1. Heat a pan with oil and fry the chopped onion until golden brown.
  2. Add the minced garlic and ginger and fry for two more minutes.
  3. Cut the carrot into slices, the tomato into cubes, the green beans into smaller pieces and separate the cauliflower into florets.
  4. Add the biryani spices to the sauce, stir well, and add the vegetables and sauté until well mixed with the spices
  5. Add the yogurt, tomato and lemon juice and continue cooking until the vegetables begin to soften
  6. Add the rice and water or vegetable broth and bring to a boil.
  7. Lower the heat to medium-low, cover the pot and cook the Indian rice for 10 minutes.
  8.  Turn off the heat and without removing the lid let the rice rest for 5 minutes.
