The beet and apple salmorejo consists of a very rich and fresh cream, a totally healthy dish full of vitamins and minerals. A very complete recipe that you can take as a single dish or as a starter. On the other hand, you should also know that salmorejo is similar to gazpacho, but some ingredients differ, since depending on the area it is made with some ingredients or others.
Ingredients to make Beetroot and Apple Salmorejo:
- 500 grams of cooked beets
- 3 ripe tomatoes
- 1 apples
- 1 clove garlic
- 50 milliliters of olive oil
- 1 pinch of salt
- 4 tablespoons of vinegar
How to make Beetroot and Apple Salmorejo:
- To start with the recipe for beetroot and apple salmorejo, you should first know that if you buy it cooked, you only have to chop it so that it does not cost to crush it. On the other hand, if you want to cook it, you can buy a raw beet and cook it until it is very tender. Chop the beetroot and add it to a bowl.
- Peel the apples, remove the center and chop the rest. Next, add the apples to the bowl along with the beets.
- Wash the tomatoes, chop and add with the rest of the ingredients, also add a clove of garlic or two, as you like.
- Add a small glass of cold water in the bowl and grind little by little, you should know how hard it is. If you notice that water is needed, add little by little so that it is not too liquid, as you like.
- Keep grinding until there is a smooth and creamy cream without lumps and, when you almost have it, add the oil and grind so that the cream is emulsified.
