Gnocchi or gnocchi are a type of pasta that is traditionally made with potatoes, flour and cheese, this time we bring you this dish with a twist, since we add the noble beetroot and thus give it a completely different flavor and color. The beetroot gnocchi recipe is quite simple, but with it you will be able to surprise your diners with a dish of bright colors and a lot of personality.

Ingredients to make beetroot gnocchi:

  1. 3 potatoes
  2. 2 beets
  3. 1 egg
  4. 200 grams of flour
  5. 150 grams of milk cream
  6. 50 grams of fresh cheese
  7. 50 grams of patters cheese
  8. 50 grams of blue cheese
  9. 50 grams of Parmesan cheese

How to make beetroot gnocchi:

  • Wash and peel the potatoes and beets. Put them to boil in a pot and, when they are tender, strain them.
  • Add egg to the beets and process until you get a fine puree. Also, mash the potatoes for another mash.
  • Join both purees and knead them. Add flour little by littleuntil there is a homogeneous mass with which you can form buns.
  • Tip:Add as little flour as possible. The less flour you use, the lighter they will be.
  • Make the typical gnocchi rolls bykneading on the work table. From the rolls, cut each gnocchi with a length of approximately one centimeter.
  • Tip:If you want to keep the gnocchi, place them on a floured plate and freeze them. When you want to use them, boil them with a little salt right out of the freezer.
  • In a pot with boiling water and salt, add the gnocchi and let them cook until they float. Veils removing with a slotted spoon and reserve.
