The pure flavor will come to your table when you prepare this succulent beet soup that the base of this soup is beet, we will also add a little carrot. For the presentation we can add a little parsley. If you want to make a fresher beetroot soup you can make it with apple.
Ingredients to make Beet and Carrot Soup:
- 1/2 beets julienned
- 3 sliced carrots
- 1/2 sliced onion
- 1 liter of vegetable broth
- salt pepper and thyme to taste
- cheese to taste
How to make Beet and Carrot Soup:
- We cut the ingredients in a similar size so that later they are made in a homogeneous way.
- In a pan, fry the onion with either butter or oil.
- After a few seconds, add the carrot and beet and season with salt and pepper, fry for 2 minutes.
- Add the broth and thyme, leave for 15 minutes so that the vegetables are tender
- We go to the blender and grind, or if you prefer with a manual mixer.
- We serve the beet soup sprinkled with cheese. It is advisable to serve this photo cold or at room temperature. This soup is not served hot, for this reason it is a very suitable soup for summer or spring.
