Beet and Carrot Soup Recipe

The pure flavor will come to your table when you prepare this succulent beet soup that the base of this soup is beet, we will also add a little carrot. For the presentation we can add a little parsley. If you want to make a fresher beetroot soup you can make it with apple.

Ingredients to make Beet and Carrot Soup:

  • 1/2 beets julienned
  • 3 sliced ​​carrots
  • 1/2 sliced ​​onion
  • 1 liter of vegetable broth
  • salt pepper and thyme to taste
  • cheese to taste

How to make Beet and Carrot Soup:

  1. We cut the ingredients in a similar size so that later they are made in a homogeneous way.
  2. In a pan, fry the onion with either butter or oil.
  3. After a few seconds, add the carrot and beet and season with salt and pepper, fry for 2 minutes.
  4. Add the broth and thyme, leave for 15 minutes so that the vegetables are tender
  5. We go to the blender and grind, or if you prefer with a manual mixer.
  6. We serve the beet soup sprinkled with cheese. It is advisable to serve this photo cold or at room temperature. This soup is not served hot, for this reason it is a very suitable soup for summer or spring.
