How to make Beef Wire Tacos:
To make the Mexican beef wires, everything you need is put together. The beef is cut into squares and seasoned to taste. Then, the peppers and onion are cut into squares. A part of onion and cilantro are chopped to garnish on the tacos already served, at the end of the Mexican recipe. Pineapple slices are cut as well. You can cut them into small cubes, for example. In the same way we proceed to cut the bacon. Ideally, the ingredients should be more or less the same size, so that the filling of the Mexican tacos cooks evenly. Place a skillet on the stove over medium heat. Let’s pour a splash of oil and add the bacon to cook until it browns and releases its fat.
When it is semi golden and has released a good portion of fat, we add the beef to continue with the preparation of the wire tacos. As the meat cooks, it changes from red to light brown, from that moment on we add the peppers and onions. We continue moving so that it cooks evenly and the ingredients of the Mexican tacos do not stick in the pan.
When the onion turns a transparent color and the peppers have softened (approximately 10 minutes), add the pineapple. We leave the ingredients another 5-10 minutes cooking. We turn off and proceed to serve the wire tacos. To make the green sauce, we roast the tomatoes, the chilies, the garlic and the onion. Then, we grind these ingredients in the blender, empty the sauce in a container, add chopped coriander and salt to taste.
To assemble the tacos we heat the corn tortillas in a Comal without toasting them, we put them on a plate and in the center of the tortilla we place a portion of the beef wire, fold. We add green sauce and lemon to taste, cilantro and chopped onion. And to accompany these beef wire tacos, a fresh Jamaica water or tamarind water.
