Beef Stew in Pumpkin Recipe

Ingredients to make Beef Stew in Pumpkin:Beef Stew in Pumpkin Recipe

  • For 4 people:
  • 1 pumpkin of 2 kg.
  • 500 grams diced beef
  • 1 onion
  • 2 cloves of garlic
  • 1 green bell pepper
  • 250 grams crushed tomatoes
  • 1/2 teaspoon dried oregano
  • 1 bay leaf
  • 1/2 teaspoon sugar
  • 5 glasses of meat broth
  • 1 glass of red wine
  • 4 potatoes
  • 2 ears of corn
  • 6 peach halves in syrup
  • 1 pinch of freshly ground black pepper
  • oil

How to make Beef Stew in Pumpkin:

Cut the top third of the pumpkin and remove the fibers and seeds.

Put it in a dish and bake it for 45 minutes.

Peel and chop the onion, garlic and bell pepper finely.

Peel and cut the potatoes and cobs in half and into thick slices.

Heat the oil in a saucepan, fry the cubes of meat and remove.

In the remaining oil, fry the onion, garlic and pepper.

Add the tomato, oregano, bay leaf, sugar, salt and pepper.

Cook for a couple of minutes and pour in the broth and wine.

Add the meat, cover and cook over low heat for an hour and a half.

Add the potatoes and cook for 15 minutes.

Add the corn and peaches and cook 5 more minutes.

Fill the pumpkin with the stew and serve it hot.
