Ingredients to make meat soup for the cold:
- 600 g of beef (shank, shank, shank)
- 1 leek
- 1 onion
- 3 sprigs of parsley
- 1 handful of chickpeas
- 1 piece of ham knuckle
- 1 tip of ham
- 1 veal knee bone
- 3 carrots
- Water
- Salt
- noodle or shark
How to make Beef Soup for the cold:
1.The night before, soak the chickpeas in slightly warm water with a pinch of salt.
2.In another container, put the bone and the ends of the ham in cold water and in another the knee bone.
3.The next day we drain everything and place it in a large saucepan along with the cleaned meat, carrots, leek, onion and parsley.
4.Cover with water and place over medium high heat so that it begins to boil.
5.Once the water boils, add the chickpeas, lower the heat a little and cover.
6.From time to time we will look at the broth and deform it, to remove all the impurities and to obtain a broth that is as clean as possible.
7.Cook until the meat and chickpeas are tender, about two hours.
8.Once the broth is made, we remove the meat, bones and vegetables and strain the liquid into another pan in which we will make the soup.
9.We boil again, add salt and the pasta that we like the most, let it cook and serve immediately accompanied if we wish by some chickpeas or shredded cooking meat.
