Beef Broth Recipe

Ingredients to make Caldo de res:

  • 1 kilogram of beef ribs
  • 1 unit of Marrow
  • ½ unit of Onion
  • ½ unit of Tomato
  • 1 large garlic clove
  • 3 units of medium carrots
  • 2 units of medium Italian pumpkins
  • 1 unit of Corn
  • 1 large Chayote unit
  • 15 units of green beans without tip
  • 1 can of cooked Chickpeas
  • ½ unit of green cabbage
  • 1 bunch of coriander
  • 1 branch of mint

How to make Caldo de res:

  1. The first thing we are going to do before starting with the preparation of the beef broth is to prepare all the ingredients. To do this, crush the garlic clove with a pinch of cumin and a little saffron and set it aside. Separately, cut the carrots into strips lengthwise, do the same with the pumpkins and the chayote. Cut the corn into medium slices and the green beans in half. Finally, cut the cabbage into medium wedges. Reserve each ingredient in a different container.
  2. Now that you have everything ready, wash the meat and soak it in water for a few minutes to bleed it out. Then, cook the ribs with the bone marrow, adding enough water to cover everything. Add salt to taste and the onion and cook over medium heat for approximately 45 minutes.
  3. Once the meat is cooked, remove the onion and marrow so that the center does not escape and reserve them for later. Season the meat with the minced garlic mixed with cumin and saffron, and add the corn, the green bean and the tomato cut into pieces. Let everything boil for 15 minutes.
  4. After some time, to continue with the beef broth recipe, add the rest of the vegetables and the cooked chickpeas and let it cook for approximately 10 more minutes. Then add the coriander and mint and adjust the salt if necessary.
  5. When all the ingredients are well cooked, you can now serve and taste the beef broth. You can accompany this nutritious dish with red rice or white rice, according to your tastes, and the marrow.
