Beans with Pork Leg Recipe

Ingredients to make Pork Leg Beans:

  1. ½ pound red beans
  2. 1 unit of Pork leg
  3. 2 units of red tomato
  4. 2 units of purple onion
  5. 1 pinch of salt
  6. 1 pinch of food coloring

How to make Pork Leg Beans:

  •  Leave the beans to soak in plenty of water the night before preparation to soften them. The next day, take them to a pressure tank with water and along with the chopped pork leg. Cook for 45 minutes over medium-high heat.
  • Tip: Add water until the beans and meat are completely covered.
  •  After this time, carefully uncover the pressure cooker and slightly lower the heat. Separately, make a sauce with tomato, onion and the dye. The tomato should be peeled and finely chopped, just like the onion.
  • Tip: You can add more ingredients to the sauce, this is to taste.
  •  When the sauce is ready, we put it in the pot with the beans and the meat. Correct the seasoning with a little salt if necessary and cover the pot again. Continue cooking for 15 more minutes and that’s it.
  • Tip: If there is a lot of broth left, let it consume by keeping the pot on the heat but without the lid.
  • Enjoy the beans with pork leg and accompany with a little white rice or corn tortillas.
