Ingredients to make Pork Leg Beans:
- ½ pound red beans
- 1 unit of Pork leg
- 2 units of red tomato
- 2 units of purple onion
- 1 pinch of salt
- 1 pinch of food coloring
How to make Pork Leg Beans:
- Leave the beans to soak in plenty of water the night before preparation to soften them. The next day, take them to a pressure tank with water and along with the chopped pork leg. Cook for 45 minutes over medium-high heat.
- Tip: Add water until the beans and meat are completely covered.
- After this time, carefully uncover the pressure cooker and slightly lower the heat. Separately, make a sauce with tomato, onion and the dye. The tomato should be peeled and finely chopped, just like the onion.
- Tip: You can add more ingredients to the sauce, this is to taste.
- When the sauce is ready, we put it in the pot with the beans and the meat. Correct the seasoning with a little salt if necessary and cover the pot again. Continue cooking for 15 more minutes and that’s it.
- Tip: If there is a lot of broth left, let it consume by keeping the pot on the heat but without the lid.
- Enjoy the beans with pork leg and accompany with a little white rice or corn tortillas.
