Ingredients to make Beans with partridge:
- 2 farmed partridges
- 1 package of farm beans (beans)
- 2 leeks
- 1 purple onion
- 5 cloves of garlic
- 3 bay leaves
- 3 cloves
- 1 dessert spoon of sweet paprika, ground rosemary
- 1 dessert spoon of salt or to the point, ground chili, or pepper
- 1 small glass of apple cider vinegar and virgin olive oil
How to make beans with partridge:
After letting the farm beans soak for 24 hours, put them in a deep saucepan with enough water to cover them at least three fingers above them.
Add the whole peeled tomato, the garlic cloves with the skin and without cracking. Also add the leeks and, before adding the peeled purple onion, prick the cloves into it.
Trick: We stick the cloves in the onion to prevent them from spreading and it is difficult for you to find them later.
Cover the pot and let it cook for an hour over low heat. Cut the partridges into halves and pour oil into a clay pot to fry them until golden brown. Do not add salt yet or the partridge meat will toughen.
After the cooking time of the beans, remove all the vegetables except the garlic. Don’t forget to also remove the cloves from the purple onion. Put the vegetables in a chopper and blend until they become a puree. The beans should continue to cook.
In the same pan where you browned the partridge, sauté bay leaf, paprika and ground chili, stir and do not keep it for more than a few seconds over low heat. You can add any other spice or hot seasoning if you wish.
Immediately pour the sauce that you have whipped like a puree and fry for three minutes, stirring. This sauce that is formed is going to be one of the important parts of this dish of partridge with beans, as it will help it to take on an unmistakable flavor.
Add this sauce mixture to the pot where the beans are boiling. Stir and let them continue to cook over low heat. It is important to be patient, because this type of beans take time to cook, even more so if you cook them in a normal pot over low heat as was done in the past.
Next, add a small glass of apple cider vinegar or some mild vinegar, and add the salt to the point. Be careful when adding salt, because by concentrating the flavors the broth takes more strength and can be very salty.
