Beans with Mote Recipe

In this recipe we are going to make a Creole and typical Chilean dish, some nicknamed beans, a product widely consumed during the winter season due to its low caloric intake. In other countries the beans are known as beans and are used for the preparation of multiple dishes, varied and full of flavor. Follow the step by step that we offer you and learn how to easily cook this incredible Chilean recipe.

Ingredients to make Beans with mote:

  1. 2 cups of white beans
  2. 1 unit of white onion
  3. 2 cups Mote or pearl barley
  4. 1 teaspoon of oregano
  5. 1 teaspoon paprika
  6. 1 unit of Pumpkin or pumpkin
  7. 1 teaspoon of olive oil
  8. 1 pinch of parsley
  9. 1 liter of meat broth or stock
  10. 1 pinch of salt
  11. 1 pinch of black pepper

How to make Beans with Mote:

  •  The first step to make this Chilean recipe is to pre-list the ingredients. You must leave the beans or beans to soak from the night before. Likewise, the mote must be previously cooked.
  •  The first thing we must do is cook the beans. To do this, remove the water where we hydrated this product and take it to a pressure cooker with a little salt and, if you wish, some bay leaves to give our recipe an extra flavor.
  •  While we cook the beans we are going to make the base stew of the Chilean recipe. To do it, bring a deep pot over medium heat with the olive oil, add the finely chopped white onion and sauté for a few minutes.
  •  Add the finely chopped parsley, paprika, salt and pepper to taste. If you want, as something additional, you can add red pepper or paprika. In my case I did not want to add this ingredient, since paprika is the same but in powder form.
  •  Add the cooked mote to the pot where we have the previous base stew. Integrate all the ingredients well.
  •  Cover the preparation with the broth or meat stock; add the squash or squash in medium squares and let cook for 20 minutes, or until the broth is reduced. In this way, we are going to obtain a Chilean preparation with a lot of flavor.
  •  Lower the heat and add the dried oregano to give an extra touch to our beans with mote recipe.
  •  Once you think the beans are soft, remove the lid from the pressure cooker and taste them, if you consider that they are already at the right cooking point, remove them from the water.
  •  Mix the cooked beans with the Chilean stew and cook over medium heat for 10 more minutes so that all the ingredients are well integrated.
  •  Serve the recipe for beans with mote very hot, ideal to consume on cold days. Sprinkle some fresh parsley on top and present some Chilean empanadas and marraquetas on the side. Enjoy!
