Ingredients to make Bean stew:
- 1 liter of vegetable broth
- 1 stalk of celery with its leaves
- 50g dried beans
- 1 large tomato, ripe, without skin
- 1 small onion
- 1 bunch of fine herbs
- Salt
- Pepper
- 1 tablespoon chopped parsley
- 1 tablespoon of oil
How to make Bean stew:
- Wash the beans and soak them for 8 hours; then boil them slowly until tender, salting them towards the end of cooking. Leave them in their liquid, off the heat. Cut the tomatoes, celery and onion into pieces.
- Bring the broth to a boil; add the vegetables, the drained beans and the aromatic herbs and boil until everything is very soft. Remove the bunch of herbs and blend or sift everything.
- Return this cream to the saucepan, add the oil, bring to the boil, seasoning as necessary and serve the bean stew, sprinkling the parsley on the surface.
