Bean stew recipe

Ingredients to make Bean stew:

  • 1 liter of vegetable broth
  • 1 stalk of celery with its leaves
  • 50g dried beans
  • 1 large tomato, ripe, without skin
  • 1 small onion
  • 1 bunch of fine herbs
  • Salt
  • Pepper
  • 1 tablespoon chopped parsley
  • 1 tablespoon of oil

How to make Bean stew:

  1. Wash the beans and soak them for 8 hours; then boil them slowly until tender, salting them towards the end of cooking. Leave them in their liquid, off the heat. Cut the tomatoes, celery and onion into pieces.
  2. Bring the broth to a boil; add the vegetables, the drained beans and the aromatic herbs and boil until everything is very soft. Remove the bunch of herbs and blend or sift everything.
  3. Return this cream to the saucepan, add the oil, bring to the boil, seasoning as necessary and serve the bean stew, sprinkling the parsley on the surface.
