Ingredients to make Bean Sprouts with Oyster Sauce:
- 1 tablespoon sliced fresh ginger root
- 1 tablespoon oyster sauce
- 1 pinch of salt
- 200 grams of bean sprouts
- 2 tablespoons of oil
- 2 spring onions
How to make Bean Sprouts with Oyster Sauce:
- Don’t wash the bean sprouts if they come in plastic wrap, but refrigerate them until you’re ready to cook them.
- (Refrigerating them better preserves the crunch after cooking.)
- Heat a skillet over high heat until smoke begins to come out.
- Add the oil and turn the pan.
- Put the white part of the spring onions and add the ginger slices.
- Throw in the bean sprouts.
- Over high heat, sauté them by running a spatula across the bottom of the pan and shaking and stirring vigorously for about 2 minutes so they cook evenly.
- Sprinkle with salt towards the end of the cooking time; add the green parts of the spring onion.
- The bean sprouts have to be crispy and release very little water.
- Transfer them to a hot serving platter.
- Drizzle with the oyster sauce, mixing lightly with a pair of chopsticks or a fork, and serve.
