Bean and Carrot Salad Recipe

Here we explain how to make a bean and carrot salad with peas and sweet corn for the whole family. This recipe is an ideal warm starter for any time of year. It is a very nutritious dish and if you want to give it a little more flavor you can add a hard-boiled egg, a little bacon or even a few pieces of ham.

Ingredients to make Green Bean and Carrot Salad:

  • 1 kilogram of green beans
  • 500 grams of carrots
  • 1 can of sweet corn
  • 250 grams of peas
  • 1 cup of mayonnaise sauce
  • ⅓ cup of water
  • ½ chopped spring onion
  • 1 pinch of salt

How to make Carrot and Bean Salad:

Wash beans and remove fibers; then cut off the ends, cut them into small pieces and put them in a pot with boiling water and a pinch of salt until they are soft but al dente.

Wash the carrots, peel them and cut them into small squares/rectangles. Cook them also in another pot with boiling water and a pinch of salt.

Wash the peas and cook them in a separate pot also with a pinch of salt. It is more elaborate but we cannot cook all the vegetables in the green bean salad together because each one has its own cooking time.

In a small bowl add the cup of mayonnaise sauce, the chopped onion and a pinch of salt and stir well, then add the third of the water and stir again to obtain the dressing.

In a salad bowl or bowl, add the green beans, carrots, peas, and the can of sweet corn, well drained, and stir to mix well.

Serve the bean and carrot salad mixed with the dressing or put it on the side like I do if you prefer. To decorate this carrot and bean salad you can put a hardboiled egg and cut it in half.
