Battered Tempeh Recipe

If you are wondering what tempeh is, you should know that it is an animal protein substitute. Made from fermented soybeans. It has multiple benefits for our health and its consumption is highly recommended, although many people have doubts when preparing it. That is why I share this simple and quick recipe that consists of tempeh bites battered in yogurt tempura with spices and aromatic condiments. For the marinade I have mainly used soy yogurt, ginger, garlic and the Indian spice mixture tandoori masala, since many dishes of Indian cuisine that use yogurt contain this mixture. If you can’t find it, feel free to experiment and use any other type of masala or prepare the spice mix yourself. Find out how to make battered tempeh and enjoy.

Ingredients to make Battered Tempeh:

• 250 grams of tempeh
• 1 small glass of soy yogurt
• 3 garlic cloves
• 1 teaspoon grated fresh ginger
• 1 jet of water
• 1 teaspoon onion powder
• 1 tablespoon apple cider vinegar
• ½ teaspoon brown sugar
• 3 tablespoons lemon juice
• 1 tablespoon of flour
• ½ teaspoon sweet paprika
• 1 teaspoon salt
• ¼ teaspoon cayenne pepper
• 1 teaspoon of tandoori masala (optional)

How to make Battered Tempeh:

To prepare the tempura for the battered tempeh, mix the yogurt with the minced garlic and ginger, the lemon juice, a splash of water, the flour and all the spices and seasonings in a bowl: paprika, salt, pepper, sugar, onion powder and vinegar. If you can’t find the tandoori masala spice mix you can omit it or substitute any other masala. Pass the mixture to the blender and crush it to integrate the ingredients well. Cut the tempeh into pieces and coat them with the yoghurt tempura. With the help of a spoon, cover them with the yogurt so that they are completely covered.

Prepare a baking tray lined with parchment paper and place the battered tempeh pieces on top. Preheat the oven to 180ºC and bake the tempeh for half an hour. If you have leftover yogurt tempura, pour it on top of the tempeh pieces after 15 minutes of baking, or save it for another recipe. Serve the battered tempeh recipe with a side of baked or fresh vegetables or basmati rice.
