Ingredients to make Basmati Rice Curry with Carrot:
- For 2 persons:
- 200g rice (doesn’t have to be basmati)
- 1 onion
- 2 carrots
- 2 garlic cloves
- A teaspoon of ginger powder
- A teaspoon of yellow curry
- A “star” of star anise
- Salt
- Olive oil
How to make Basmati Rice Curry with Carrot:
- Bring a pot of water to a boil (one and a half times the amount of rice), a little salt and the star anise.
- When it boils, over medium heat, add the rice and cook it for 10-12 minutes, so that almost all the water evaporates and it is not pasty.
- We drain the excess water if necessary, throw away the anise and set it aside.
- In a frying pan, heat oil over medium heat and add the finely chopped garlic.
- Then the chopped onion (it was a word in French, the Anguiano cuts it like this many times…) and the carrot into small pieces.
- When the carrot changes color, add a pinch of salt, ginger and curry and mix well.
- Then we add the rice and stir it all the time until it has a nice yellow color ^__^.
- It looks good in a nice bowl, if it is made of wood, better.

- I give you the approximate proportions (I almost always do it by eye…:-S).
- It is a very healthy dish and excellent to accompany roasted vegetables, for example, or even as a single dish.
- You can add all the vegetables you want, or meat in small pieces, but I like it that way, simple.
