Banana pancake recipe

Ingredients to make Banana Pancake:

  1. 4 ripe bananas
  2. 2 cups of self-rising flour
  3. 4 eggs
  4. 2 tablespoons of bicarbonate of soda
  5. 1 cup of sugar (200 grams)
  6. 1 lemon or orange
  7. 1 cup of powdered sugar (140 grams)
  8. 100 grams of lard or butter

How to make Banana Pancake:

  • Preheat the oven to 180ºC. Once this is done, place the peeled and chopped bananas in a bowl and mash them with a fork until they have a puree texture. Add the melted butter and mix until well incorporated.
  • Tip: You can also do this step with a processor.
  • Add the sugar and mix until it dissolves and you don’t feel the grains. To make a healthy banana pancake, use brown sugar, brown sugar, or some sweetener.
  • Add the eggs at the same time and continue beating until everything is well integrated.
  • Add the flour and baking soda and beat until smooth and lump-free.

  • For the glaze, put the icing or powdered sugar in a bowl with a few drops of citrus juice and mix.
  • Powdered sugar absorbs a lot of liquid, so add the lemon or orange juice little by little until you gets the desired consistency.
