Banana Fufu Recipe

Fufu is a snack originating in Ghana, where it is considered a staple food. Its elaboration has undergone numerous variants, especially once it reached the American continent brought by African slaves in the Caribbean.

Among these variants, this banana fufu recipe is one of the most prepared, especially in Cuba and the Dominican Republic. Ingredients to make Banana Fufu:

  1.  4 green bananas
  2.  1 lemon
  3.  1 pinch of salt
  4.  1 onion
  5.  3 cloves of garlic
  6.  3 tablespoons of seed oil or lard
  7.  1 pinch of freshly ground black pepper

How to make Banana Fufu:

  • Peel the green bananas and cut into slices. Put the green banana slices in a saucepan covered with water, a little salt and squeeze a few drops of lemon juice. Put on the fire and cook until the banana pieces are soft. It will take you about 40 minutes or something more.
  • Peel the onion and garlic cloves and chop finely.
  • Heat the seed oil or a piece of lard in a frying pan. When hot, fry the onion and minced garlic cloves.
  • Drain the banana slices, but do not throw away the cooking broth, you will need it. Put the slices in the pan together with the onion and the garlic cloves and fry for two minutes, stirring from time to time.
  • Remove from the heat and put everything in the blender glass, add 10 tablespoons of the cooking water and blend. Surely you will need to add more water from the cooking so that the fufu does not dry out. Leave it to your liking as if it were a puree. Season with salt if necessary and add a little freshly ground black pepper.
  • Serve immediately so that each diner serves what they want. You can also accompany the plantain fufu with pork rinds, pig trotters or fried bacon. Banana fufu is ideal to accompany rice dishes or stews.
